Our oysters

The cultivation of our oysters is done in rafts.
The rafts were designed so that by means of a wooden palisade, we can hang the oyster ropes, developing a special oyster.

Processes of cultivation of our oysters

The oyster farming process includes pre-fattening, fattening and depuration, ensuring their growth and quality before reaching the market.

Process 1

Pre-fattening process

The basis of a good culture is centered on an intensive selection of the seed, which we take care of and prepare so that the passage from the oyster baskets to the rope is as stress-free as possible.
This step from pre-fattening to fattening is one of the key moments in the development of our productions, so it is done by hand without any machinery that can stress and slow the growth of each specimen.

Process 2

Fattening process

Once the oysters are glued with cement, we transfer them to the pan where they will remain between 8 and 14 months until their size and the quality of their meat are ready for the selection, cleaning and depuration process.

Process 3

Debugging process

Once the oysters have been transferred from the oyster raft to our onshore facilities, we select and clean the oysters one by one, following very strict criteria of % of meat and size.
Then we stable the oysters in our pools, thus beginning the purification process, ensuring that our products reach the market with the maximum guarantee of quality, freshness and food safety.
